I wish I had a bunch of people to cook for but it was just myself, my wife, and my picky kids. I made a prime rib in honor of Jameson. I couldn’t get one big enough to slow cook long enough but it still turned out great. It reminded me of the time he graduated and his dad and mom took us out a Lawrys at Jameson’s request. It was the first time I was ever there. Best prime rib I ever had!
So tonight I made a 4.5lb prime rib that I let rest to room temperature. I coated it with extra virgin olive oil, then seasoned it with Kinders prime rib seasoning and a dusting of Lawrys seasoning salt. I had my Akorn smoker set to 345 degrees indirect heat, and put the prime rib on around 2:40pm. Typically I’d like to run a lower temp for longer but wanted it to be done around 4:30 when my wife got home. The cook is well done and I know Jameson would always bust my balls on well done being over cooked, but it’s my wife’s preferred temp. 🤷🏼♂️ 😂.
We included some green beans and some garlic mash and the most fitting bottle of red wine I had to cheers Jameson. Here’s to you Jameson, we miss you brother!

Looks great Scott! That’s a huge prime rib. Love how the seasoning looks. Next year, make 1 well done and 1 medium rare 😉
